Getting warmer. And warmer temperatures mean that more than just oranges and potatoes will be in season soon. For me, that means salad for lunch. I can’t get enough of fresh fruit and veggies in the summer.
My favorite salad? Well, that changes weekly, but right now, I’m dying for a BBQ chicken salad with black beans, corn, avocado, tomatoes, peppers, onions all on a bed of leafy greens. Then you know what I do? Crush a few tortilla chips over the top and add a few glugs of ranch dressing. And then, I chow down.
