During the Christmas holidays, I bake a beautiful braided yeast bread, called houska, for my friends. While I’m in the process of making it, I also call it all sorts of other names – the “freakin’ bread” and worse. Attitude. Like Scrooge himself assigned me this task. The reason I’m so grumpy is that despite my efforts to the contrary, we accumulate new friends each year. So, more bread. Last year I made 21 houskas. I have made as many as 26. Yeast. Breads. Ever made bread? There are two important ingredients: yeast and TIME. Lots of TIME. Standing. On. My. Feet. Forever and ever until the end of the world.
Each year, when I’m about halfway through making the bread, I start to seriously consider each friend and whether they are “houska worthy” or not. Yes. So I can STRIKE them off “The List”.
